1. Chocolate Crust Ingredients:

  • ½ cup unsalted butter melted
  • 2 cups almond flour
  • 3 tablespoons unsweetened cocoa powder
  • ¼ cup granulated erythritol sweetener

2. Filling Ingredients:

  • 8 oz. low fat cream cheese, room temp
  • ¾ cup sugar free smooth peanut butter, room temp
  • 1 ¾ cup heavy whipping cream
  • ½ teaspoon vanilla
  • ½ cup powdered erythritol
  • ¼ teaspoon guar gum

3. Topping Ingredients:

  • 2 tablespoons sugar free peanut butter
  • 2 tablespoons heavy whipping cream
  • 1 tablespoon powdered erythritol
  • 2oz dark chocolate

Chocolate Crust Method

  1. Preheat oven to 350 degrees
  2. Combine ingredients and mix well
  3. Press firmly into a 9” pie plate
  4. Bake for 15 minutes
  5. Remove from oven and allow to fully cool

Filling Method

  1. Combine peanut butter and cream cheese until fully combined and creamy
  2. Combine the remaining ingredients and whip to soft peaks
  3. Fold peanut butter mixture into whipped cream
  4. Transfer filling to cooled pie crust
  5. Place in freezer for 30 minutes

Topping Method:

  1. Combine peanut butter, cream and erythritol
  2. Transfer to plastic baggie with corner cut away and squeeze onto pie
  3. Melt chocolate in microwave and drizzle over pie
