Stewed Zucchini

Stewed Zucchini

Ingredients:

  • 2 medium zucchini sliced
  • 2 medium yellow onions sliced
  • 2 cloves of garlic chopped
  • 29 oz can whole tomatoes crushed
  • 2 tablespoons Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Method

  1. Add a swirl of olive oil to a 2 qt sauce pan
  2. Heat oil and add onions and zucchini
  3. Add about a teaspoon of salt and pepper
  4. Cook until the onions and zucchini begin to soften
  5. Add the garlic and cook until it gets fragrant. About 2 minutes
  6. Add the crushed tomatoes and Italian seasoning
  7. Bring to a boil and then reduce to a simmer
  8. Simmer for about 20 minutes.
  9. Taste and adjust seasoning.

    Hi Sherry, I make my Zucchini, just about like this, the only difference is I add some sliced Celery to mine. We love Zuchinni. I can make a giant pan if it. There is only the 2 of us, like you and John, and that whole pan won’t last 2 days. I will eat some over a couple of days, if my hubby leaves me any lol. He could eat nothing but the Zucchini and that’s it, even if there is other things to eat. One other thing I do sometimes is to mix my variety of Such in his together. Its so good. One kind just compliments the other kind. Try it sometime and see if you all like it. You both have a great Labor Day weekend. Take care. Were battling 107 – 110 + degrees here in Central, Caluf.
