Cook until the onions and zucchini begin to soften
Add the garlic and cook until it gets fragrant. About 2 minutes
Add the crushed tomatoes and Italian seasoning
Bring to a boil and then reduce to a simmer
Simmer for about 20 minutes.
Taste and adjust seasoning.

I’ve tried this different ways but not with the zucchini ,am going to make it with the zucchini , probably tom night. Youve got me wanting it since I seen the pic haha .

Hi Sherry, I make my Zucchini, just about like this, the only difference is I add some sliced Celery to mine. We love Zuchinni. I can make a giant pan if it. There is only the 2 of us, like you and John, and that whole pan won’t last 2 days. I will eat some over a couple of days, if my hubby leaves me any lol. He could eat nothing but the Zucchini and that’s it, even if there is other things to eat. One other thing I do sometimes is to mix my variety of Such in his together. Its so good. One kind just compliments the other kind. Try it sometime and see if you all like it. You both have a great Labor Day weekend. Take care. Were battling 107 – 110 + degrees here in Central, Caluf. In Italian we call this Jumbote! I also add peppers and potatoes! Delicious!
